But is sounds like the ejectors function just fine under normal use and the only issue being the removal of the forend and the hammer tripping at that time.

Basically the top side of the combination sear is not grabbing the hammer. But... this can be caused by 2 or 3 different things as the root cause. No way to diagnose over the internets.

Parker Ejector systems sure are a pain.

Your first post should solve your problem, Fire the barrels before removing the forearm and the ejector hammers will not fire. End of problem.
