Default Straight Stock

Does a straight stock make any difference to the value of a Parker shotgun all else being equal?

Most definitely, I'd say close to a grand.

I prefer a straight stocked gun but I don't know if I like them a "grand" better...

I think a 10% premium is close.

Restocked or converted from pistol grip maybe even negative. Lots of variables there.

In all cases, there were less straight grips made than pistol grips. So they would be considered rarer. Most Values books do not put a price adder for the straight grip. But there are many out there that would pay a premium for one just because they favor them.
