Sage Butter-Fried Pork (Venison) Chops

Craig’s game recipes are always inspiring and this sage butter-fried recipe calling for 1” thick pork chops is an awesome dish and would be just as outstanding with venison chops. It’s a very simple, 30 minute, 10 ingredient, one pan dish and the sherry and fig preserves along with white wine, cayenne pepper and shallots really makes this sing. Better go easy on the sage! After we cooked a couple of these babies up for dinner (nothing but a little salt and pepper rub with light oil), I could still taste the sage 3 months later!!
