Phil, By the time steel barrels were offered the EH designation was pretty much over. The gun would have been listed as a GH. Is it possible it was rebarreled by Parker with Special Steel barrels? A letter may prove interesting. Is the water table marked EH? As others have said it sounds like a great project.
