Andy, look up The Buffalo Shoppe. They're in Hamlin PA. They raise their own Bison, along with other meats. Check their web site out. Lots of goodies.

There was or is a bar/resteraunt in Hamlin we used to frequent when my buddy still had his cabin in Newfoundland . But for the life of me I cannot remmember the name of the place . Musta closed and reopened as “R Place on 590” . As that place looks like it .

Craig, It was the J&J. The owner, Jim Chapman sold the place and retired a couple years ago. The new owners renamed it R Place. It's not the same.

I have had Bison steaks a couple of times. Most recently at The Cowboy Grille in Sedona. While it was prepared perfectly I would prefer a beef strip steak any day over the Bison. But then again that's why we have vanilla and chocolate. I have had their Bison chili as well, now that was right tasty.
Where we pheasant hunt in south central SD has become quite the spot for raising Bison. They are quite common. Must be profitable as some of these ranches have suddenly dumped what has to be millions of dollars into some of the facilities that have cropped up.
Good luck Andy. If you find the perfect dish bring it to The Rock. I will try it for sure. Said I didn't prefer it, never said I didn't like it

I'm a fan of Bison. Good flavor and texture. More and more eateries are serving Bison. I guess it's a personal taste as I also prefer bear over venison.
