Smoke 'Em If You Got Em

My season will start this week, so I wanted to empty the freezer of grouse and pheasant. Had more than I thought. I brine them, them rub them down with brown sugar and spices, I particularly like one called Good Shit.. If you have made it to Hausmans in June, I usually have this out for snacks for my friends. It's also a big hit at a local winery the wife and I frequent. No matter how much I bring, there is none to take home. This is 2 trays from my smoker, made 5 trays total
