In regards to the trigger plate. The cocking slide will want to fall out if the gun is upright when the plate is removed. The best thing to do is tap the plate loose in the upright position and then flip it over when actually removing the plate so that the slide will just be sitting there when the plate is removed.
Another part that you need to be mindful of is the trip assembly. This can fall out too if in the upright position and it can be much harder to find than a cocking slide.

In regards to the safety. When putting the frame back into the stock, you have to interlock the safety swivel (in stock) with the square hole in the safety slide on the tang. This can be very tricky at times. I have found it best to put the safety button back in safe position. And Put the swivel in the same position and then put the frame into the stock. Rarely will they interlock right away. But then you can move the safety swivel with your finger from the bottom until it falls into place.
You need to have the safety lever seated into the slide correctly before you do anything else. It may come back out while you are putting the sears back in, but you can usually get it back in by just movin the frame a bit. But it has to be seated in order for the trigger plate to go on.
