A few pictures are easier than wordy explanation. A Calgary restaurant is serving up chicken and duck stuffed turkey. Now this might be a great way to also do any combination of game birds. I'm gonna give this a try with the next turkey dinner we do.

Jack, My partner who is a great cook made one of these for Thanksgiving this year. He really didn,t care for it.

When it comes to wild game I prefer that nothing at all comes between my palate and the savory flavor of the meat I am eating. No marinades, no special dressings, no strong stuffings. Things like salt, pepper, garlic and wine sauces are okay with me but that's about all. I like to enjoy the subtle aroma and flavor of the wild game for what it is.... not what I can make it taste like.

Dean, no apology necessary at all. I do like game meat prepared in almost any manner. Never thought of doing something like this, so I will save a couple birds to do inside a turkey. May or may not be okay but my tastebuds will figure it out. The blend of flavours could be interesting.

I usually fry a turkey for Thanksgiving but last year fried a Turducken. Did not much care for it as to get the duck cooked had to over cook the turkey. My coonass friends just rave about it, but they rarely eat it, or much else,sober.

Based on the thoughts thus far, maybe I'll only save 1/2 a bird to try this out :)

Supervised by a professional butcher, two friends of mine and I boned out the three birds. With 4 of us working, it "only" took about 3 or 4 hours to prepare the birds, never mind the cooking time on top. Interesting project, but not worth the trouble, IMHO

One can order Turducken from a number of custom butchers in Louisiana. We did one a few years back for Thanksgiving. It was great. You should try a groundhog stuffed with a possum, stuffed with a squirrel. Now that's eatin'. :-)

We do a similar compilation with fish. Coho salmon around a walleye wrapped in a musky. Call it a Kowalski. That and a dozen beers will make you stupid.
