My wife does this with chicken but last weekend I used Pheasant.
Fillet the breast meat and brown it lightly. Cover the meat with salsa and let it simmer for 30 min or untill tender then cover it with cheese. I used a Mexican mix of shredded cheese. Serve with nacho chips or over rice. IF you have enough for leftovers it's even better the next day.
