As promised in another thread ,Ralph's Squirrel Recipe ! We named this after my Wife's Step Father ,the mightiest Squirrel Hunter East of the Rockies I believe ,this is the only game that Ralph would hunt and he hunted them nearly every day they were in season until the weather would get too cold for him in the last season ! Well here goes ;
Start out with as many Squirrel as needed to feed your Family ,we would usually have at least eight or so !
Clean and cut Squirrel into pieces
Roll Squirrel in Flour mixture with a touch of salt and pepper
Pan Fry Squirrel till browned
Remove Squirrel and put all cooked flour mixture in Granite Baking Pan
Add one layer of Squirrel then one layer of Thickly cut onions
Sprinkle Granulated Chicken Boullion lightly on onions
Continue layering Squirrel and Onions and Boullion until all are in pan
Put Squirrel in the Oven at 300 Degrees for approx. 6 Hours
This makes a thick Gravy and Squirrel that falls off the bone ,it is a bit messy to eat but removing bones before hand is nearly impossible !
