FWIW , I love fried chicken . I decided to try pheasant breasts the same way I make fried chicken and they were not bad ! Just have coleslaw and fried potatoes to go with .

Some of my friends have smoked pheasant breasts I gave them and they all said they were delicious . Now I realize it’s all a relative thing , but generally none of this stuff comes out bad .

Yea, the problem is it's really easy to end up with smoked shoe leather.

One guy did them on the breast bone and said they were difficult to keep from drying out . Other guy did just the breasts in basket kinda thing and his were nowhere near as dry .

I would think, wrap in bacon..... Might keep them from drying out.

This evening we’re having pan fried pheasant breasts that were lightly rolled in flour with Kicken Chicken seasoning along with boiled green beans and taters seasoned with cilantro , a little mango pineapple fruit mix , Sugar Free 7-UP and a little Sauvignon Blanc . And no I don’t go hungry , hence the reason I’m not skinny
