The down side to these large geese (not feather down) is they are like eating rubber. It seems every goose we get around here is enormous and old to boot. Jerkey is what they are best for. I used to be in the Northern part of the state where we got all sizes of canadas. One day I got 4 different sub spp all in ascending sizes. The smaller ones are superior eating in my book and great for roasting. Seems like we seldom come up with a young one in this region and they do get hunted quite a bit. Perhaps they are hatched full grown.
