Grilled up a handful of quail last night. Simple, coated in olive oil, seasoned with Cavenders, and a splash of Sweet Baby Rays honey chipotle sauce.

Nothing fancy, but they were excellent.

Joe, I like to marinate my quail and then do them up in a Traeger.

FWIW , I love fried chicken . I decided to try pheasant breasts the same way I make fried chicken and they were not bad ! Just have coleslaw and fried potatoes to go with .

Some of my friends have smoked pheasant breasts I gave them and they all said they were delicious . Now I realize it’s all a relative thing , but generally none of this stuff comes out bad .

Yea, the problem is it's really easy to end up with smoked shoe leather.

One guy did them on the breast bone and said they were difficult to keep from drying out . Other guy did just the breasts in basket kinda thing and his were nowhere near as dry .
