Last of last years partridge !
Last package of as Honest John calls “red legged partridge” from last year were used in jambalya tonight ! I’ve been messing around with the Zatarains Jambalya in the box so that’s what I used tonight along with a few slices of banana peppers . This is a bit dryer then the other stuff I use from a can and I believe slightly dryer is more correct . Anyway either version isn’t bad . After serving the only thing I require are a couple shakes of the Tabasco and I’m good ! On a side note and don’t get me wrong I love Turkey , but it was time for a change from Thanksgiving Day leftovers

It isn’t greatly different but I believe I like the flavor of the partridge over the pheasant in the jambalya . Not to say I dislike the pheasant , just I seem to favor the partridge a bit .
