Oryx/Gemsbok is a high priority for me as is a Red Hartabeast. Kudu are fun to hunt. There the Grey Ghost of Africa. Impala, warthog are also usually available. The outfitter will be able to provide you a list of available animals and a trophy fee list. I must warn you Africa is like small bore Parkers, it gets into your blood and won't leave you. Plan some additional time to do some sightseeing as well.

I'm in the Savage '99 group...and in both .250-3000 and Savage .303. My sporterized Mauser 98 in 30-06, an inexpensive gun that was my Christmas present when I was 15, has accounted from many(!) deer over the years. Nothing special...except to me.
