Default Venison Tartare

Made some venison tartare with part of a backstrap from a doe. Turned out tasty. I’ll be making it again with a different recipe. But tomorrow, carpaccio is on the menu.

I had no idea what tartare was until I googled it , anyway if I correctly understood what I read the venison in this is raw correct ?
