Default Smokin'

Last week it was grouse, pheasant, quail and wild turkey, along with a blackberry pie. Today is venison jerky in the smoker. Trying to use up last year's game in the freezer before the new season starts. Need to do another batch of birds. I vacuum seal them when done.

Harold, I can smell that smoker all the way up here!! Is your jerky done in strips or do you grind it and run it through a "jerky shooter"?

I had a lot of deer burger, so I used a jerky gun. Some in strips, and some in "slim Jim" rods, to see which way I liked best. Gonna take a couple more beers and more jerky to make that decision.

Looks good. I just finished making a batch of deer jerky and some summer sausage made from ground venison.
