Default restocking

If a parker was made with a pistol grip and was restocked with an straight stock would that change balance and handling of the gun ?

The difference in weight between the two would be little. The density of the two different pieces of wood would have more of an effect than the grip styles.

Just pick up the gun and try it out, is the best thing to do.

I've done it twice and never had any issues with balance or handling.
