Default Prospect Hall pheasant jambalya

Made jambalya at the shop today with pheasant breasts from Prospect Hall . Added mushrooms and a few jalepenos. Grocery store cole slaw and Hawaiian rolls . Lunch at the shop today ! My freezer is slowly emptying

I'm telling you Mills, Hank Shaws Dove Poppers. I'm not a popper fan most times as I think it's sort of like making pepperoni sticks out of an entire deer; a bit of a cop out. But his are nothing short of orgasmic. I roasted 12 whole heads of garlic, roasted 20 poblano peppers, and followed his directions to a T. Made about 100 of them, gone in record time. They're some work, but they were just astounding.

Andy, I wonder how rail poppers would be? That recipe looks pretty darn good...if not Italian.

Craig, so do you serve your meals to customers in your shop? Gotta be a good drawing card, for sure.

I cook for about six of us on a semi regular basis . Usually a week or so before Xmas we’ll have a Christmas luncheon . I’ll make two or three main course dishes and other people bring stuff . There have been as many as two dozen on some years .

Garry I have no idea what a rail tastes like. First time I had dove, and I freaking loved it. The garlic makes it.

Central PA. 4 guys, 60 doves, one hour. Was a hoot. Did NOT shoot a Parker only because I've been so busy I haven't had time to reload and saving my better stuff for grouse/Vintagers..etc. Am I the only person who HATES reloading? It's like fly tying for me. Love fly fishing, would rather cut my eyelids off with a dull butter knife than sit at a bench. I have adult ADD. I get five done, have to do something else. I get so bored. Maybe in the dead of winter I'll do more.
