Bison anyone?

I had a Bison prime rib at a local restaurant the other night and it was once of the best pieces of meat I've ever had. I've had bison burgers and sausage but this was game changing. Anyone ever do this with Bison? And where do you source it? Any help appreciated but I'd like to try this for a game dinner someday.

Yes, there is a local ranch here that raises and sells bison. It's pricey but every once in a while I'll treat myself to a thick bison steak.

There are I think five or six bison farms/ranches within thirty miles of me . And several local butcheries that sell bison . I’ve done a grilled surf and turf kinda thing with bison ribeyes and prawn .

Lots of choices online but I don't know who to trust. If I pull the trigger I'll post my experience.

Dunno if they’re still in buisness but there used to be a place called Georgetown Farms in Madison VA that raised and butchered all their own . I consumed there bison quite a few times . https://www.google.com/search?q=geor...t=safari#ebo=0

Andy, look up The Buffalo Shoppe. They're in Hamlin PA. They raise their own Bison, along with other meats. Check their web site out. Lots of goodies.
NE corner of the state in Wayne county.

There was or is a bar/resteraunt in Hamlin we used to frequent when my buddy still had his cabin in Newfoundland . But for the life of me I cannot remmember the name of the place . Musta closed and reopened as “R Place on 590” . As that place looks like it .

Craig, It was the J&J. The owner, Jim Chapman sold the place and retired a couple years ago. The new owners renamed it R Place. It's not the same.

Bob, thank you! They're only an hour away from me. Perfect.

I have had Bison steaks a couple of times. Most recently at The Cowboy Grille in Sedona. While it was prepared perfectly I would prefer a beef strip steak any day over the Bison. But then again that's why we have vanilla and chocolate. I have had their Bison chili as well, now that was right tasty.
Where we pheasant hunt in south central SD has become quite the spot for raising Bison. They are quite common. Must be profitable as some of these ranches have suddenly dumped what has to be millions of dollars into some of the facilities that have cropped up.
Good luck Andy. If you find the perfect dish bring it to The Rock. I will try it for sure. Said I didn't prefer it, never said I didn't like it :)

Bummer ! I consumed a bit of beer in there over the years ! Thank you sir !

Thank you Randy. I've had bison steak too, but this prime rib was on another planet. I have grown very fond of the Buffalo Balls at the Buffalo Bar in West Yellowstone, MT. There are bison meatballs in a bowl with smashed (mashed) redskin potatoes, onion and gravy and it's the quintessential bar and comfort food. That would be good served up after a day of shooting...

I'm a fan of Bison. Good flavor and texture. More and more eateries are serving Bison. I guess it's a personal taste as I also prefer bear over venison.

We could have been in there at the same time at some point. I helped pay his mortgage for a while.

Twigs

I've had quite a bit of Bison over the years, and liked all of it. The ranch out near the Kodiak Launch Site beyond Pasagshak on Kodiak Island, has quite a Bison herd and several island eateries serve it.
Most recently a friend sent us a package with eight Bison filets and eight Angus filets. Mighty tasty!!

Mike Koneski 02-26-2025 07:36 AM

Dave, that friend is a keeper!!

Was it The Fireplace possibly?

Mike Koneski 02-26-2025 03:20 PM

If it was on Tioga St across from the library it was Todd & Rachels.
