Fox guns and ducks

I want to share a picture of a couple of upgraded Sterlingworth 20 gauges doing what they are meant to do.
These are guns I posted pictures of earlier, only this time with some Gadwalls. I am hoping someone can share their recipe for duck breast fillets. |
Coat filets with olive oil. Sprinkle with Montreal Steak seasoning. Place in a sealed plastic bag and refrigerate overnight. Take out to room temperature and grill rare. Outstanding.

I just started the filets. I had everything I needed in the pantry.
I will fire up the grill tomorrow. Unless I can't wait and fire up the grill this evening. Thanks for the recipe Steve. |

Montreal seasoning works or just salt and pepper to taste after EVO coating. Put them in fridg for an hour or so, then remove and allow them to reach room temp. Cast iron skillet on stovetop, Heat more EVO, avocado or grapeseed oil in skillet then sear top, bottom and sides. Place in preheated oven of 425* for 2-3 mins still in the skillet. Remove and allow to rest 5 mins then slice and enjoy.

This blueberry duck recipe came from a Delta Waterfowl magazine and is a hit with my family. My 11 year old daughter for the most part doesn’t touch meat and she loves this recipe.

Here's the best thing you can do to duck breasts.
10 oz. Jar Red Currant Jelly 1 ½ cups sherry 3 oz lemon juice 2 oz A1 sauce 3 oz ketchup 8 duck Breasts Combine all ingredients in saucepan. Simmer for 3 hours or longer to reduce. (Don't overcook it or you will get a sticky mess.) Soak breasts in vegetable oil for 30-60 minutes. Broil on hot grille for 2 ½ to 3 minutes (longer for goose) To serve, slice thinly on the bias (like flank steak) and drizzle sauce on breasts. |
Leave the breast fat/skin on if you can. It makes a world of difference IMO.

I have used Matts Blueberry recipe on divers, Bluebill,Bufflehead ,Ringneck made them quite edible.

I marinade the duck breasts in Teriyaki sauce and cook on the grill till medium rare.

For a twist on grilling duck try leaving it whole, plucking it. The fat is under the skin and adds much flavor to the meat. Get a couple of the little doohickeys that hold a chicken upright on the grill, butt down.
Coat liberally with EVO then pack lots of salt and pepper on the EVO. Grill on low heat being careful not to overcook. Scrumptious. Nice pic, Phil. |
Phil, I remember the "Brady Rose" 20, but I'm not familiar with the semi- beaver tail 20. Is this another custom Chris built for you? I'm just loving your small bore Foxes!

Never shot a duck, or at one for that matter, have never been duck hunting. Those pictures and recipes makes me want to start.
What loads are you shooting thru those 20s? |
Tell us more about the guns. What all did Chris Dawe do? Anything in particular to make them safe with duck loads? Beautiful guns

Foxes and ducks definitely belong together - in this case a 12 ga. 32" 3" SuperFox. Berthieville, Quebec, Canada Fall 2008. "Ducks? You bat you!

MD Eastern shore Canadas with a Fox 30" 20

Spent a couple great days with friends in Rock Hall, MD chasing canada geese. For those of you who might have gone to Hopkin's Sporting clays for the vintagers, it's not far from there. Well we really weren't chasing them, more like sitting and waiting in a blind for them. But they did show up. The first day I always like to hunt with my Dad's Beretta 303 which I had won at a clay shoot 30+ years ago and gave to him because I didn't shoot right handed autoloaders and he really liked it. He hunted with it until his death at 97 so there are plenty of ding and dents to remind me of our hunts together. We limited out by 0830 but the interesting thing was that we were shooting over a pond and these birds presented themselves, wings cupped, at 30yds. Hmmmm. The next day my 30" 20ga sterly made it's way to the blind and although it took a little longer to limit out I waited and got the perfect set and three birds made the mistake of gliding in, wings cupped and necks outstretched. Game over with two shots.
