Default Filet Mignon of the Sky

Could not ask for better weather for opening day. Fifty-six degrees at sunrise and a few birds felled by my 28 gauge Repro. As I write, my belly is full of (in my opinion) the finest eating game bird. Hope all the other dove hunters out there had a successful hunt.

Do you just grill them or marinate them first?

I marinated for 30 minutes in a mixture of soy sauce, honey and olive oil.

Pierce them, insert a slice of pepper or onion, wrap in bacon, and you're good to go!

Thanks for the marinate. I added a little fresh garlic and left off the bacon to keep the cardiologist happy! Add some fresh tomatoes , sweet corn and wild rice gives you a feast.
Don't forget the red wine.

Filet mignon of the sky is such an apt description. I marinate and baste in a little butter, worcestershire and garlic and cook them on the grill. Probably my favorite game meat.
