Default Parker id help

Hey all.
First off, thank you for letting me join your site. I am Parker illiterate for the most part but your site has a wealth of info. I have a small gunsmithing business and i have a customer that brought me an old Parker for some conservation. This shotgun is 12 gauge, exposed hammers with Lifter, Twist Stub barrels with the serial number showing it was built in 1879. Its in pretty good shape except the butt stock is all but gone.
I am fitting a semi inletted stock to it but im trying to figure out exactly what i have here so i can get the appropriate size butt plate and give me an idea on size to bring the stock down to.
It has a U marked on the water table with the serial number. On the Lug, I cannot make out the mark.
The wood looks pretty plain with no engraving anywhere on the gun.

I read on here that the grade should be on the water table but I dont know what the U equates to.

Thanks for the help.

Parker Bros. Lifter (or Underlifter) 12 gauge with 30" Twist barrels and a pistol grip.

There are varying opinions on what the U signifies. It is a Grade-0
