Venison Meatloaf

Default Venison Meatloaf

Serves 6-8

This can be made with regular ground beef or with a Venison/beef or pork ground mix. A Venison grind makes the meatloaf very lean.

2 lbs. ground Venison or Beef.
1 packet of onion soup mix
2 eggs
1-1/2 cup bread crumbs
1/3 cup ketchup
3/4 cup water
1 tsp parsley
3/4 tsp garlic powder
1/4 tsp pepper
3/4 cup grated cheese

Mix all of the above and put into meatloaf pan and bake for 1 hour at 375 degrees. With 5-10 mins left, layer slices of white or yellow cheese on top to melt.

Sauce:
Mix Ketchup, brown sugar and mustard together for a nice tasting sauce to top it with after it comes out of the oven.

Brian, my recipe is similar but I use a chopped yellow onion instead of onion soup mix and a couple tablespoons of yellow mustard. Great eats for sure. I'm going out in the morning for the start of deer season here and hopefully get the main ingredient for meatloaf.

Note that the sauce is supposed to go on the meatloaf when it is pulled out to put the cheese on top of for the last 10 mins of cooking.

The amounts for the sauce is 3/4 cup ketchup, 1 tbs mustard and 1 tbs brown sugar. The mustard and brown sugar amounts can be increased to taste.

Thanks, Brian. It will have to be last years venison for my meatloaf. First year in a long time I got skunked.
