Sandhill Crane Recipe
 
Looking for a good recipe for Sandhill Crane. Have heard that they are great eating and have two from N. Dakota last fall.

One of our faves is Crane Fingers, like steak fingers, slice breast into 2”x1/2” long strips, and soak in buttermilk and a whole small bottle of regular hot sauce, (texas pete, louisiana hot sauce, trappey’s,etc.), for an hour or so. Make a dredge of flour, black pepper, powdered garlic, onion powder and paprika. Take finger out of milk, dredge, shake, dip into milk mixture again and back into dredge. I like to fry them in an iron skillet in bacon grease. When last one out of pan, reserve several tablespoons of frying oil with all of the brown bits in there and stir in two tablespoons of the dredge and stir til the roux begins to brown slightly, deglaze with one cup white wine cook the wine down by half and add 4 cups whole milk and stir til desired thickness.

But his works too, and WAY healthier.

Slice into a little larger strips, use your favorite steak grilling seasoning, and grill to just medium rare.....
